Vegan: A person that chooses a lifestyle that aims to eliminate the use of products obtained from animals for food, clothing or any other reason. This means that they don't eat any meat, fish, dairy products or eggs. They also avoid products that are tested on animals and do not wear fur, wool or leather.
A vegan's diet includes foods such as: beans, lentils, nuts, seeds, soya products (for protein), whole grains, vegetables, fruits and healthy oils.
People choose to become vegan for various reasons, the most popular include:

-To improve personal health
-Spiritual or religious beliefs
VEGAN PANCAKES
Ingredients:
1 1/2 cups unbleached white flour
3 tablespoons organic sugar
1 3/4 teaspoons baking powder
dash of salt
3 dashes of nutmeg
1 to 1 1/4 cups soy milk
3 tablespoons vegetable oil
1 Ener-G Egg Replacer (found at health food stores)
Directions:
Combine all dry ingredients (flour, salt, vegan sugar, baking powder, nutmeg). Combine wet ingredients in a separate bowl. Mix wet and dry ingredients, but don't over-stir. Pour onto hot skillet, flip once. Makes 6 medium pancakes.
Note: You may also add fresh fruit such as blueberries or vegan chocolate chips for some variety!
Pizza Potatoes
1/2 cup broccoli, chopped
1/4 onion, chopped
1/4 cup carrots, chopped fine
1 small tomato, sliced
2 baked potatoes
1/2 tablespoon margarine
1/2 tablespoon flour
1/2 cup skim milk
1/4 cup cheese, shredded
Cook broccoli, onions, and carrots in a small amount of water until tender and set aside. In a saucepan, melt margarine and stir in flour. Add milk slowly while stirring. Cook until sauce thickens, stirring occasionally. Add cheese and stir until melted. Add vegetables to cheese sauce and stir. Split open potatoes. Pour equal amounts of vegetable cheese mixture over each potato. Top with sliced tomatoes.
Serves 2.
GRANDMA'S FRENCH ONION SOUP
3 tablespoons.....(45 ml).....butter.
2 cups......... (500 ml)......thin sliced onion.
4 ˝ cups........(1125 ml)......bouillon.
Salt and pepper to taste.
Worcestershire sauce to taste.
2 teaspoons.....(10 ml)......sugar.
FRENCH BREAD
Parmesan cheese or other finely grated cheese heat butter, add onions, simmer about 10 minutes or until soft and lightly brown. Add bouillon, bring to boil and simmer 20 minutes.
Season to taste with salt, pepper and Worcestershire sauce. Add sugar. Pour soup into individual soup dishes. On top of each, float a slice of sauted French bread and sprinkle with grated cheese. Put in oven 350 F, (175 C), until cheese is melted.
YIELD: 6 servings.
TIME: 60 minutes.
AUNT PAT'S FAVOURITE BUTTER TARTS
1/3-cup ....(80 ml) ..butter
1-cup.......(250 ml)..brown sugar
2 tablespoons.(30 ml).milk or cream
1/3 cup.……….(80 ml)...currants
1 egg beaten well
1 teaspoon..(5 ml)....vanilla
Mix all ingredients together. Put in unbaked tart shells.
Bake at 450 F, (230 C), for 8 minutes. Turn down to 350 F,
(175 C), and cook until brown.
VANILLA PUDDING.
1 cup, 2 teaspoon ...(280 ml)..pudding mix.
2 cups................(500 ml)..water.
2 tablespoons.........(30 ml)...butter or margarine.
1-teaspoon.......………..(5 ml).....vanilla.
Combine pudding mix and water in saucepan. Bring to boil, turn stove down and boil gently for 2-3 minutes. Stir constantly. Remove from heat, add margarine and vanilla. Stir. Let stand for 15 minutes, stir again and chill.
YIELD: 4 servings.

COOKING INFORMATION
Food manufactures are permitted to irradiate potatoes and onions to inhibit sprouting; wheat flour to control insects; and ground spices and dehydrated seasonings to reduce microbial content. In 2005 The European Civil Society released a statement against irradiation stating, "Food irradiation is often used as a substitute for good sanitary practices and misleads consumers, as it kills spoilage bacteria, which tells people when food is rotten through smell or sight"

Where possible we should buy locally -grown foods. As a rule your food is fresher, better flavour, picked within a day of your purchase. Local produce more likely has a higher nutrient content than store-bought produce that has spent time on a transport truck and warehouse.
Further farmers who sell directly to local customers receive the full value for their product, can sell cheaper, as there is less cost to processing, transportation, packing, warehouse etc.
An uncovered pan with a rack in the bottom gives the best
results in roasting. Cooking time varies with preference.
For rare meat, 16 minutes per pound.
For medium meat, 22 minutes per pound.
For well done meat, 30 minutes per pound.
Add salt during or after cooking, not before. The salt flavour
does not penetrate more then 1 inch. If the meat does not reach
the desired colour during roasting, increase the heat to (500 F)
for a few minutes before removing from the pan.
Methods of searing is subjecting the meat to a high temperature
until it is nicely browned.
By Browning in an uncovered pan in a hot oven (450 F-500F).
By Browning in hot fat in a frying pan on the surface burner.
By Adding boiling water and cooking at boiling temperature until
the outside of the meat has lost its red colour.
Reasons For Cooking Meat
To develop flavour.
To soften the connective tissue when present in large quantity.
To kill any living organisms that may be present.
To make meatballs of even size, spread mixture in an ice cube tray and press the divider down to separate meat into uniform squares. Take out divider and shape squares lightly into balls.

TIPS FOR HOME SAFETY
Lead Poisoning:
Banned since 1973, lead-based paint may still be found on children's toys, furniture, particularly on old articles. If not sure strip and repaint any questionable articles.
Glazed earthenware bowls, plates, mugs, could also be potential source of lead poisoning. Acidic foods, such as citrus juices, soft drinks, and pickled foods, can dissolve the lead in glaze.
Poisoning:
Keep poisons locked away or out of reach. Children are not discouraged by bad taste. Keep your local Poison Control Centre's phone number near the phone in case emergency. Buy medicines and household products with child-resistant packaging.
Remember some plants are also poisonous and should be kept out of reach from children's and pets.
Drowning:
Never leave a child alone near a body of water, even a puddle.
Empty wading pools, pails of water that are not being used.
When on a boat or wharf always put life jackets on children.
PARTY, BAR MIXES
If you're having a party, provide food with drinks. Offer non-alcoholic substitutes such as fruit, soft drinks.2 drinks taken within an hour by a person 100 pounds produces a 075 reading. One drink is equal to about 1.5 oz. of whisky or 2 bottles of beer. The rate of elimination for each hour after drinking has stopped is 015. A 200-pound person, after 1 drink produces a reading of .019, so you can see there is a big difference due to weight.
Montreal Gin Sour.
2 oz. Gin.
2 teaspoon Lemon juice..
1 teaspoon Lemon juice.
1 teaspoon Sugar syrup.
1 egg white.
Combine with ice. Shake. Strain and add ice.
Frozen Cider.
8 oz. Sweet cider.
4 oz. Orange juice.
1 teaspoon Applesauce.
A few drops of lemon juice.
Combine in blender at a high speed or until thick. Store in the freezer until thick enough to eat with a spoon. Best served in tall glasses.
House Standard
1 jigger Tequila
2 jiggers Tomato Juice
2 dashes Tabasco
Shake with cracked ice and strain.
Serve with slice of lemon.
NON-ALCOHOLIC DRINK
Cherry Bing
1 pint cherry juice
4 ounces orange juice
Dilute the cherry juice and orange juice with 10 ounces water; stir to blend. Add chunks of ice before serving.
